"Learn more about spreadsheets" is a reasonable interest, but a vague project. It gives you no clear way to choose lessons or know when the first stage is complete. You can keep watching tutorials without using the material.
Choose something you want to make or explain after learning. Perhaps you want to build a simple household record or understand one formula in a work file. Describe the result at a level suitable for a beginner.
Select lessons for that result
Choose introductory material that covers the parts you need. Practise those parts in a small file where mistakes are easy to correct. Keep a note of the questions that arise during the attempt rather than collecting every possible topic beforehand.
When you can produce the intended result, check that you understand the steps well enough to repeat them. Then decide whether to deepen the skill or use it for a while. The demonstration marks one useful stage of learning; it does not need to prove mastery of the entire subject.
